A delicious sugar cookie with a tropical twist with the dried mango in the cookie dough. The Prep time is only 45 minutes as these cookies mix up quickly but they need at least an hour to chill in the fridge.

Ingredients

  • Dried Ingredients – Mix Together
  • 3.5 Cups All-purpose Flour

  • 1 Tsp Salt

  • 1 Tsp Baking Powder

  • Wet Ingredients – Mix Together
  • 1.5 Cups Butter – melted and cooled

  • 1.5 Cups Refined White Sugar

  • 2 Large Egg Yolks: save the egg whites to secure the pecans onto the dough.

  • 2 Tsp Vanilla

  • Other Ingredients
  • 1/2 Cup Dried Mango cut into small pieces

  • 1/2 Cup Pecans – Crushed

Directions

  • Preheat the Oven to 350 degrees
  • Mix all dried ingredients in a bowl and then set aside.
  • Add the dried ingredients to the wet ingredients and mix thoroughly.
  • Mix all wet ingredients. Do not over-mix, but make sure they are mixed thoroughly.
  • Add dried mangoes to the dough. You can add as much or as little as you want. We love the taste of dried mangoes, so we always like to add a lot.
  • Cut dough into 2 or 3 sections and then roll it into a long log. Use plastic wrap to secure the log in place.
  • Chill dough for at least an hour or overnight in the fridge.
  • Once the log is chilled, please remove it from the fridge and brush the dough with egg white. Brushing the ends is unnecessary as you will not put nuts on them. Then, roll the dough in the nuts. The egg whites will help secure the pecans to the outer edge of the dough.
  • Cut cookies about 1/4 to 1/2 in thick. The Thickness is up to you and how thick you want the cookies. Then, let them rest on the baking sheet for about 15 minutes. This will help them to bake more evenly.
  • Bake cookies for about 12 minutes or until all the edges are slightly golden brown.
  • Allow cookies to cool before serving or putting them away.
