You can use monk fruit sugar or honey as a sugar-free alternative. I rarely make this with white sugar but always use a healthier sugar such as monk fruit sugar.

An easy-to-make, refreshing lime soda, my go-to beverage inspired by Thai cuisine.


  • 1 1/2 Cup Fresh lime juice, we prefer if you can get kaffir limes. This will be about 6 to 8 limes. It can add more or less to the taste.

  • 1/2 to 1 Cup Sugar ( if you want it very sweet, add more sugar)

  • 1/2 to 1 Cup Water (use the same amount of water to sugar mixture)

  • 2 Quarts Soda Water

  • 1 bunch Fresh mint (optional)

  • Ice Cubes


  • Heat the sugar and water together for approximately 2 to 3 minutes until the sugar is entirely incorporated into the water. Set it aside to cool, or make it in advance and store it in the refrigerator until it’s needed.
  • Extract the juice from the limes. If you have access to kaffir limes, make sure to clean and save the leaves, as they can be used to enhance the flavor of the drink.
  • Combine the lime juice and soda water thoroughly.
  • Incorporate the sugar-water mixture. The amount you use can be adjusted according to your preference for sweetness.
  • Garnish with fresh mint leaves (optional)
  • Add ice cubes


  • This is an excellent alternative if you’re attempting to cut back on sugary sodas. Substitute regular sugar with a sugar alternative, such as monk fruit sugar, and you’ll discover this to be a refreshing, effervescent beverage to keep at hand.
