The Vietnamese stir-fry beef, green beans, and tomatoes recipe (Đỗ Xào Thịt Bò) is a straightforward Vietnamese dish to make. The recipe uses the quick-cooking stir-fry method. When made correctly, it bursts with many great flavors and tastes. It is also a very healthy recipe as it uses only fresh ingredients. You should first understand the Asia stir-fry cooking method to make the recipe correctly.

The Asian Stir-fry Cooking Method Explained

The stir-fry cooking method originated in China but then spread to other parts of Asia. Many Vietnamese dishes use this method for cooking.

The definition of stir-fry cooking is:

“Fry (meat, fish, or vegetables) rapidly over a high heat while stirring briskly.”

You can use minimal oil in your cooking with the right wok. Also, water tends to be used a lot in the Vietnamese stir-fry method. If you are stir-frying a lot of Asian food, investing in a good wok is essential.

Stir-fry cooking is considered a healthy way of eating. If you watch our video on how we make stir-fried beef, you will see that we use minimal oil in the cooking. The meat brings out the flavors, the simple sauces we use, and the quick-cooking stir-fry method.

Stir-fry Tips and Pointers

There can be a bit of skill required to stir-fry food properly and not overheat or burn the food.

Here are some of our tips and pointers on how to correctly stir-fry:

  • Heat the pan – When stir-frying, always heat the pan first. Do not try to stir-fry when the pan is cold. Take the time to make sure the pan is boiling. Do not be afraid to use a high temperature.
  • Pour in the oil – When the pan is hot, then you can pour the oil into the pan, but not before. To pour it down the sides is an excellent method to use. As the pan is very hot, the oil should start to cook almost immediately.
  • Ginger, Garlic, Shallots, and Scallions Cook First – You should always cook the ginger, garlic, shallots, or scallions first. And when you cook them, you cook them thoroughly so that the flavor will get into the oil. While cooking them, you must constantly stir and toss them so they will not burn.
  • Start with the longest cooking ingredients first – When stir-frying, you start with the longest cooking ingredients first, which is usually the meat. In the case of our stir-fried beef, we cooked it first and then took it out of the pan. Sometimes this is the method used as you do not want to overcook the meat.
  • Meats must be very thin or in small pieces – When you are stir-frying any meat, you must use meat that is very thinly sliced or in tiny pieces. If you have to cook them too long, this could change the dish’s flavor. In this recipe for our Vietnamese stir-fried beef, you will see that the beef we used is extremely thin. If you watch the video, you will also see how quickly the beef was able to cook because it was so thin. The thin meat gives this dish a lot of great flavors that you will not get if the meat is too thick.

Vietnamese Stir-fry Beef with Green Beans and Tomatoes (Đỗ Xào Thịt Bò)

We love this Vietnamese stir-fried beef with fresh green beans and tomatoes, as it is a great way to use your summer harvest of fresh vegetables. The Vietnamese name for this dish is Đỗ xào thịt bò.

This dish is originally from North Vietnam, but now it is so popular that it can be found throughout Vietnam. It is considered a basic Vietnamese stir-fry dish. One reason may be that it is quite easy to make and requires few ingredients.

Here is our recipe for the Vietnamese Beef, Green Beans and Tomatoes Stir-fry -Đỗ xào thịt bò

The recipe Serves About 6 people. 

Recipe Ingredients: 

10 cloves of garlic

4 small tomatoes

800 grams or 1.75 pounds of green beans

300 grams or .66 pounds of thinly sliced beef

2 teaspoons vegetable oil and additional oil for cooking. 

1 heaping tsp of salt

1/4 cup water 

Recipe Cooking Directions: 

Cut the ends off the green beans  and clean the green beans, and cut them in half, about 2” long per piece  Cut up the tomatoes   Crush and mince the garlic cloves into tiny pieces

Marinate the beef with 2 teaspoons of vegetable oil and about 1/2 teaspoon of salt.  

Marinate Beef for at least 10 mins.  

Quickly boil the beans.   A quick boil is when you bring the water to a boil and put the beans in the water for about 1 to 2  minutes.   You want them to still be crisp and not fully cooked.  Rise then with water.  

Heat up your Wok or pan on high

Add about 1 Tablespoon of Vegetable Oil to the hot wok.

Cook the garlic in the wok with the oil until brown,  Stir constantly.  This will take about 1 minute.  Then add the beef and cook until almost done.  If the beef is thinly sliced, this should also only take a minute or so.  Take the beef and garlic out of the wok.  Do not rise the wok, but put aside the beef and garlic mixture.  Do not turn off the heat on the stove.  

Add 1 tablespoon of oil to the hot wok.

Now add the tomatoes to the wok.  Cook them for a bit, and then add 1/4 cup water.  

When cooking, the tomatoes smash them up, so they become like stewed tomatoes.  

Once the tomatoes are fully cooked, add the green beans and stir them together.  Cook the tomatoes and green beans together for a few minutes, mixing them up as you cook them.  

Cook until the tomato and green beans are almost done.  You do not want to overcook them. 

Then add the beef mixture to the beans and tomatoes mixture and stir fry them together for about 1- 2 minutes, stirring frequently.  If you want to, at this stage, you can turn the heat down just a bit.  

Once fully cooked, the Vietnamese beef, green beans, and tomato stir-fry dish is ready to eat.

Preparation Tip:

If you wanted to cook this dish for an evening meal, you can marinate the beef ahead of time and cut up all the vegetables ahead of time. You could even quickly cook the beans so they are ready to go into the stir-fry.

To cook this dish should not take more than 10 minutes once the vegetables and meat are cut up and prepared. With a bit of preparation, the Vietnamese beef, green beans, and tomatoes dish (Đỗ Xào Thịt Bò) is a very quick, healthy, and easy evening meal.
