Ingredients

  • 2.2 pounds Fresh Tomatoes

  • 2 to 3 tablespoons Extra Virgin Olive Oil

  • 1 piece Carrot Shredded

  • 1 medium Onion

  • 6 cloves Fresh Garlic

  • 2 Teaspoon Oregano Or Italian Seasoning To Taste

  • 1 teaspoon Sugar

  • Pinch of Salt

  • 5 to 6 pieces Fresh basil leaves

  • 1 cup Water

Directions

  • Begin by washing the tomatoes thoroughly. Once cleaned, proceed to halve each tomato, removing the top part. Next, carefully scoop out the seeds from the tomato halves.
  • Grate the carrots and cut the onions and garlic into small pieces.
  • Heat some olive oil in a pan, then sauté the garlic and onions, stirring and cooking until they become fragrant and slightly softened. Once that’s done, add the grated carrots to the pan.
  • Add all the remaining seasonings, including the tomatoes and water, to the pan. Stir well to combine the ingredients. Bring the pan to a boil.
  • Once the mixture reaches a boil, reduce the heat to a simmer. Allow the sauce to simmer for a minimum of 90 minutes gently. We prefer to let the sauce simmer for an extended period to enhance its flavors. You can even leave it on the stove and allow it to simmer while attending to other tasks.

  • To achieve a thicker consistency resembling tomato paste or sauce, gently mash the tomatoes with a spoon or a potato masher. This will help break down the tomatoes and release their juices, resulting in a smoother texture. Simmer the sauce while occasionally mashing the tomatoes until you reach the desired thickness.
